Fredrik, tell them to stuff it. I've put down deposits on bikes before, and if Ducati want to be some sort of quality outlet and customer caring company they'll give you your money back. BMW dealers (at least mine) takes a deposit, but they'll give it back if you don't want the bike.
The deposit is a token of serious interest. When the bike's about to go into production they contact you and you firm up the deal. Until then, you get your money back.
