If I hadn't bought a Super Duke, I would have bought a VFR800. I still might someday.

For my second bike, I have a 1976 Honda GL1000 I am restoring. The flat four is great, the bike is stable and comfortable, it's unfaired so it doesn't look gaudy like newer 'Wings, parts availability is good, and the online community supporting it is great. It might be too heavy for you based on what you said about the Triumph twin, but I think the '75-'77 GLs are amazing.

I also have a 2007 Ducati Monster S2R800. It's pretty, but it's not good for much of anything. I should sell it and use the money to mod the SD and finish the GL.
As an additional bike...
Last march, I picked up a nice used BMW R1200R.
It's no SD, but that's not why I bought it.

Honda VFR or BMW F800ST would be my choices. Both are good tourers and pretty good in the twisty stuff too
A TDM is also a nice twin.
