These bikes only send out a signal for 2nd & 3rd gear, so it won't pick anything up for any of the other gears, the plug is in the belly pan.

Try searching for Gear indicator on the forum as one of those threads might list the wires for revs and speedo.

For the gear sensor, like TJ said.
RPM you can get from the injector pulse (in big grey plug on the right side behind the tank panel) or the feed to the coil packs.
The easiest for the speed might be to get a pulse from the front wheel sensor. When you turn the key on the bike the speedo tells you the size of the wheel/tyre so you can work out how to set your XT GPS up from that.
