Front wheel torque settings

I never use a torque wrench on those bits.

Axle bolt - non metal to non metal - tight but don't stand on it.
Pinch bolts - don't do much - many a fork bottom has been the victim of over tightening - nipped up tight with a short wrench.

Caliper bolts - nice and tight!

thats typical, i am the same way, generally heavy handed in life. some people are better than others who wrench for a living. my dad was a machinist, and he could tell how thick something was down to .00" with his fingers and sometimes .000" . i know because i tested him with a micrometer. amazing, i did not inherit this from him though. and pretty much always use a torque wrench when i have the specs... except on fairing fasteners!
