#2I wouldn't worry about it, if you cancel and you still want the SD you're going to first have to find one available at another dealer and then you're going to have to go through the whole process all over again and possibly incur a fee for cancelling your insurance while you wait.
At least you know that this one is waiting for you and you just have to wait for the DVLA to process the paperwork.
I usually check with the insurance company to see if they are able to fax a covernote to the dealer and then sort out my insurance over the phone as soon as I get the call that the bike is ready then you can't get caught with the wrong reg, I think most dealers will accept a fax to allow you to take the bike away.

I LOVE THIS FORUM!!! even when Im totally fed up!
I DID cancel the purchase of the bike. I just feel that businesses these days are sloppy as far as customer service goes and they normally get away with it with a bit of blag. I wanted to make a point. If I'm paying £8500, then I expect the thing to be ready on the day that it has been promised. It's as simple as that.
