6'3" here, and all I needed was the KTM bar riser kit (18mm), and it's perfect. KTM # (PN: 61001043018)
It's not quite supermoto-style upright, but it's not cafe-racer by a longshot.
Changing the bars's height makes a subtle but definitive change in your posture.
