If price is not an issue and you want top protection and comfort, I highly recommend getting what half of AFM uses (and many many others).

They are H20 or Buffalo 192 1/2 gloves. I have both pairs and absolutely love them. I've wrecked in both: H20's took a lowside in our beautiful mountains here; the 192 1/2's took a Ford F-150 in the ass leading to a 150 foot slide down the asphalt and came out with zero damage to my hands (you can even get them repaired after they've been damaged).

Helmut used to sell Held back in the day, then he decided that things could be made better, you can even get him to make you a set of his wonderful gloves custom for your hand/finger length, either by wearing in a set and shipping them back in for final cut, or by faxing/mailing his shop a trace of your hands.

I'd recommend the H20's for the track or hotter weather riding. If you want a nice, soft, plush glove but still want to be able to feel the bike, get yourself a pair of 192 1/2's, they're made of deerskin.

If you want to know more, feel free to ping me via PM. I live about a 1/2 mile from his shop.

I'm with doctypo on this. Helimot gloves are the best gloves I've ever tried. I've been riding for over 30 years and raced for 17 years. I've been through a lot of gloves and nothing else comes close to Helimot's.
