I recently did the Pyrenees and chewed through my 2ct's there in under 2000 and had to get a new set of rubber. Got shafted on the price so if i was you and you are planning 3000 miles I'd go for a harder compound. I thought i'd be able to back off a bit and preserve the rubber when i noticed them wearing out quickly on the twistys. That lasted like 20 mins
The bridgestone bt021r sport touring I bought out there are lasting very well and have been good as gold grip wise for me.

Flatout, I've Strada's on my bike. I replaced the rear Diablo III with a Strada after it got punctured by a 2 inch bolt! I was planning to run a Strada Rear and Diablo Front but based on the good experience I decided to put a Strada on the front as well.
On the road they give you all the grip you need. Maybe even better as they handle better in the wet. (And the pyrenee mountain roads can be wet/damp even in the height of summer)
I've just come back from a wet weekend in Co. Antrim (Northen Ireland) and the Strada's were great. Plenty grip in all conditions and road surfaces.

If you doubt the grip level ShadeTheChangingMan did a track day with them and posted some pictures.

I'm sure that they won't match the Diablo III's on an all out track day but for the trip you are planning they will be a great choice.
Bridgestone 021's would be a good choice as well.
