remove tune or not?

2008 USA SD 90
i have done teh following typical mods: aribox, block off plates, slip on exhaust. i have it maped at the moment with GUys i think. Can i REMOVE the map and go to stock?

Will this hurt bike?

reason: i am getting some "choking" when i grab WOT at a standstill. bike runs nicely once rolling but i dont like this choking out and wondering if the map is not the correct one for my bike. thank you

If the 2nd butterfly's have been disabled or removed then it will do this,

The standard fitment of the 2nd butterfly's where fitted to prevent this from happening, if it doesn't do it when riding don't worry about it,
