I finally had a chance to get my SD on a dyno for a tuning session since installing Graves Exhaust, PCIIIusb, O2 Sensor Eliminators, and the SAS Removal Kit.
Unfortunitely, the tuning center I went to (the only one near where I live) was only willing/able to generate a basic map (a.k.a. same fuel table for both cylinders). That aside, I am really happy wih the way things turned out.
I started with the Graves map available on the Dynojet Web site, and the comments form the Dyno tech about the map were pretty much in-line with what I had read here. From about 4K RPM and up, the map was very good. The tech said that there wasn't really anything he could do to improve on things there. From 4k on down, the Dynojet map was way, way rich. He did a lot of low end tuning work to get things more in line down low and just tweaked the top end some to try and get the most linear F/A line with all throttle positions and RPM ranges.
I'm very impressed with how much smoother the SD performs now, and I second all of the sentiments that have been posted here before about the value of getting a custom map made for a bike following aftermarket alterations.
